Ginger Beer

Refreshing, sparkiling but not sugary sweet - the perfect choice for a soft drink - for Summer or parties

Method

  1. To make the Ginger Beer Plant:-
  2. Prepare a 500ml+ jar by washing and rinsing - no need to warm
  3. Put the dried yeast into the jar and add the water, 2 teaspoons sugar and 2 teaspoons dried ginger
  4. Mix thoroughly
  5. Cover the jar - I use a large coffee filter or kitchen paper secured with a rubber band.
  6. It is important not to seal the jar to allow air flow
  7. Each day for 7 days add a further 1 teaspoon each sugar and gound ginger
  8. After the last day, strain the mixture through a jelly bag or coffee filter - retain the sediment
  9. Keep the liquid separate and add the lemon juice to it
  10. Wash out your jar then divide the sediment into two - put one portion into your jar and the other into another jar. Either continue with two 'brews' or gift one to a friend with this recipe
  11. To each jar add 250ml water/10floz of water, 2 teaspoons dried ginger and 2 teaspoons sugar, then proceed as before for the next 7 days
  12. To make the Ginger Beer:-
  13. Return to the reserved liquid and add 60g sugar and make up to 4.5litres/8 pints with water, stirring until the sugar is dissolved
  14. Pour into your bottles leaving around 10cms/4 inches of headspace. Leave for 7-10 days before drinking
  15. If the bottles become very tense with the pressure slowly start to open the cap until you can hear the gas escaping. Do not release quickly or fully remove the cap until you are ready to decant into a jug for serving
  16. To do this place the bottle in the sink and take the cap off slowly
  17. Pour in one continous stream into a large jug without tipping the bottle backwards to leave any sediment behind in the bottle
  18. Serve as a soft drink or as a mixer - a great drink to make for parties or weddings - delicious but cost effective. It will keep somewhere cool while you get enough made!
