Bramble Brandy

Sweeter than Sloe Gin, this liqueur is beautifully warm and fruity

  1. Pick over the blackberries and wash if necessary
  2. Put into a pan with the lemon juice and just enough water to cover
  3. Bring to the boil and simmer for 5 minutes until the berries are soft
  4. Mash thoroughly and drip through a jelly bag into a measuring jug
  5. Measure the juice, put back into the pan and stir in the same volume of sugar
  6. Bring gently to the boil, stirring to dissolve the sugar
  7. Reduce the heat and simmer for another 5 minutes
  8. Leave to cool before adding the brandy
  9. Pour into sterilised bottles
  10. Ready when you are!
