Spiced Pickled Pears

A piquant mix of sweet pears, spices and vinegar - goes beautifully with cold meats and cheese

Ingredients

Pears,
Peeled, cored and sliced
3lb

Sugar, White granulated

Cinnamon, Ground

Method

  1. Prepare your jars by washing, rinsing and heating in a warm over to dry and sterilise
  2. Pare the peel from the lem and keep on one side. Add the juice to a large bowl of water
  3. Peel, halve or quarter the pears and take out the cores. Put the pear pieces into the bowl of water with lemon juice added as you go to prevent them discolouring
  4. Mix the spices together and then add a little of the vinegar
  5. Put the remaining vinegar into a large pan with the sugar and the lemon peel and heat the mixture until the sugar is completely dissolved. Add in the spice mix
  6. Add the pears to the pan using a slotted spoon to gently lower them into the vinegar
  7. Simmer until translucent but not breaking up
  8. Remove them from the pan carefully with your slotted spoon and pack into the warmed jars
  9. Discard the lemon peel and then increase the heat and cook the vinegar mixture until thicker and syrupy
  10. Pour over the pears and seal immediately
