Luxury Mincemeat

This is a delicious mincemeat with a lovely buttery flavour

Ingredients

Apples, Cooking
2lb

Muscavado Sugar
900 g
Currants
2lb
900 g
Raisins
2lb
900 g
Sultanas
2lb
900 g
Mixed Peel
1lb
450 g
Lemon
2 each
Orange,
Large, zest and juice
4 each
Mixed Spice
2 tsp
Nutmeg,
Freshly grated
2 tsp
Butter,
Salted or unsalted, cut into small cubes
1lb
450 g
Brandy
40 ml

Method

  1. Start by melting the butter slowly in a large pan, while you peel and chop the apples
  2. Add the appples to the pan, together with the zest and juice from the lemons and oranges
  3. Add all other ingredients and stir to combine
  4. Bring to the boil, reduce heat and simmer together until butter is all melted and fruit has softened - approx 15 mins
  5. Cool slightly before stirring in brandy
  6. Pot into warm, sterilised jars and seal immediately - this will keep for at least two years
  7. Makes a great Christmas Craft Fair crowd pleaser
