How to make Blackberry Cordial | Rosie Makes Jam Recipes

Blackberry Cordial

This listed in my Christmas recipes but you will need to make late Summer, when the wild blackberries are bountiful - they have the best flavour

Ingredients

Blackberries
2lb
900 g
Sugar, White granulated
1lb
450 g
Cinnamon Stick
1 each
Brandy
10 fl oz
300 ml

Method

  1. TIP:
  2. To prepare your blackberries after picking fill a large bowl with cold water, add about 2 tablespoons of salt and a splash of vinegar. Put the fruit into a colander and plunge into the water and leave to soak for around 30 minutes. Give the colander a bit of a shake now and again and then lift out and leave to drain. This will remove dust ( and bugs !)
  3. METHOD
  4. Wash your chosen bottles and put into a low oven to warm
  5. Put the fruit into a blender or food processor with some of the sugar and blitz them until as smooth as possible
  6. Sieve the puree into a big pan and add the sugar and spices ( keep the contents of the sieve )
  7. Turn up the heat and stir until the sugar has dissolved.
  8. Simmer gently for around 20 minutes
  9. Remove pan from heat and add the brandy
  10. Pour into the bottles, seal and put away in a dark place ready for Christmas
  11. To serve: strain through a fine sieve into a jug and then serve in small tot glasses to sip and savour
