Christmas Jam

Dark plums and dark cherries with Christmas spices - what's not to like

Method

  1. Wash and rinse your jars and place in a warm oven to dry and sterilise
  2. Prepare the *fruit by washing the plums - halve and stone before putting into a large pan over a low heat and add the zest and juice of the lemon
  3. Once the juices start to run increase the heat a little until the fruits soften
  4. Add the spices and keep stirring until everything is combined
  5. Add the jam sugar and stir until completely dissolved. Increase the heat
  6. until you have a rolling boil - set your timer for 6 minutes or the time stated
  7. on the sugar packet
  8. Remove from the heat and test for a set
  9. Pot up into your warm jars, right to the top and seal immediately
  10. Make, or stock up with crumpets - you are going to need them!
  11. * If liked, soak the dried dark cherries in vodka two weeks before to make cherry brandy. Drain before adding to the plums in the pan.
  12. CHERRY BRANDY
  13. Put 750g dried dark cherries into a large jar, add one 70cl bottle vodka.
  14. Stir well and repeat every few days. Leave for 2-3 weeks ( until ready to
  15. make this jam ) Strain liquid into a jug and reserve 300g cherries for this
  16. recipe. Make a syrup with 250ml white sugar and 250ml water, cool and
  17. add to the jug . Stir to mix.
  18. Bottle the cherry brandy and roll remaining cherries in melted dark
  19. chocolate. Lay them on a parchment-lined tray until the chocolate has
  20. hardened.
