Method

  1. Pick Wild Garlic ( responsibly!)
  2. Rinse in colander and then drain well
  3. Chop either by hand or in processor - not too fine
  4. Soften butter slightly and mix in chopped Wild Garlic
  5. Place butter in a rough oblong onto a large piece of baking parchment
  6. Starting at the edge nearest to you, roll up the paper, enclosing the butter as you go. Twist ends like a Christmas cracker until the 'sausage of butter' is smooth and round
  7. Place in freezer for 30 mins to chill
  8. Remove from freezer, unroll and slice the butter into 'coins' about half a centimetre thick
  9. Re-roll paper and then wrap in a layer of foil
  10. Label and store in freezer
  11. To Use: Either in garlic bread - place one frozen 'coin' between each slice in loaf and then wrap loaf in foil and bake for around 15 mins until butter is melted or use individual slices on steak, vegetables or in mashed potato.
  12. TOP TIP: Make plenty!
