Strawberry Balsamic

This vinegar is surprisingly strongly flavoured from the strawberries - and the flavour lasts and lasts

Ingredients

Strawberries,
Small and firm, stalks and leaves removed
16 oz
500 g
Black Pepper,
freshly ground
0.5 tbsp
Balsamic Vinegar
20 fl oz
500 ml
Sugar, Caster

Method

  1. Rinse the fruit only if absolutely necessary
  2. Chop - no need to remove the leaves - and place in a large bowl
  3. Sprinkle with the pepper
  4. Pour over the balsamic vinegar
  5. Cover with a cloth and leave to macerate for 3 days - stir now and again
  6. Prepare your bottles ready
  7. Strain through a coffee filter paper or jelly bag into a measuring jug
  8. Add 250g/8oz caster sugar to each 500ml/20floz of liquid
  9. Heat gently for 10 mins, stirring until the sugar is dissolved
  10. Bottle and seal immediately
  11. Delicious as a Summer salas dressing or serve with olive oil with some good bread, drizzle over ice-cream, pancakes, cheesecake or waffles
