Orange, Thyme and Rosemary Herb Salt

Method

  1. 1. Put the sea salt into a bowl and zest the orange straight onto the salt
  2. 2. Rinse the herbs if necessar, and pat dry on kitchen paper
  3. 3. Strip the leaves from the herbs and add to the bowl. Stir to mix
  4. 4. Blitz in a food processor - or chop finely by hand - until well blended
  5. 5. Put a sheet of silcon paper or kitchen paper onto a tea tray
  6. 6. Spread the herby mix onto the paper and leave overnight to air dry
  7. 7. Next day, wash and rinse your jars and put into a warm oven to dry
  8. 8. Spoon the salt mix into your jars, seal and label
  9. 9. Will keep indefinitely and can be used in cooking or as a seasoning/finishing salt
  10. 10. Also makes a great gift - try using different mixes of herbs or chilli
