Elderberry Cough Linctus

this is a very effective remedy for that irritating cough that is so hard to be rid of

Ingredients

Elderberries
8 oz
250 g
Water
1pint
600 ml
Honey, runny
8 oz
250 g
Cinnamon Stick
1 each
Ginger, Fresh Root, finger sized,
Peeled and shredded
1 each
Allspice Berries, whole
1 tbsp
Black Peppercorns,
Whole
1 tsp

Method

  1. Put all but the honey into a pan, bring to a boil then reduce and simmer for around 30 minutes
  2. Squash the berries with a potato masher to release the juice during this time
  3. Strain the mixture through a jelly bag, and once cooled add the honey, stirring to combine.
  4. Bottle and seal
  5. Use within 1 year
  6. Do not give to children under 12 months of age because of the honey
  7. Take the cough linctus as required but do not add to hot water as it destroys the properties of the honey
  8. N.B. It is fine to use 50g/2oz dried elderberries if fresh are not available
