Banana Jam

A very comforting jam, a soft flavour aka The Drunken Monkey!

Ingredients

Bananas
4 each
Limes
1 each
1 each
Sugar, Soft Brown
3 oz
90 g
Sugar, White granulated
3.5 oz
100 g
Cinnamon, Ground
1 tsp
Vanilla Extract
1 tsp
Rum
2 tbsp
Water
6 fl oz
170 ml

Method

  1. Wash the jars in soapy water, rinse and then place in a warm oven upside down
  2. to dry
  3. Chop the bananas into a bowl and drizzle over the lime juice
  4. Put the water into a jam pan or large saucepan and add the sugars
  5. Stir to dissolve as much as possible then turn on the heat to medium - stir until
  6. the sugars are completely dissolved
  7. Add the bananas, vanilla and cinnamon
  8. Reduce the heat and simmer for around 30 mins. Mashing the bananas down as
  9. they cook and soften
  10. As the mixture cooks some of the liquid will evaporate which will make the jam
  11. thicker
  12. Put one tablespoon rum into your jar and then quickly add the jam until about
  13. two thirds full. Add the remaining rum and top up the jar. Seal immediately
  14. Leave to cool and then refrigerate - it will thicken more as it gets cold
  15. Serve on toast, crumpets or scones. Delicious on meringues with fresh pineapple
  16. cream or crème fraiche
